WOOD ROASTED PEQUILLO PEPPERS
The true Pequillo Pepper, with its characteristic initial smoky sweetness and subtle back-end heat, is produced in Spain's Navarra region and only in that area of Spain. Of few ingredients can it be said that the flavour they impart is uniquely that of a given country or region: Pequillo Peppers are definitely one such ingredient.

An ingredient which cannot help but evoke images of the classic French Bistro; the cracked formica of chrome-edged tables pock-marked by a thousand cigarette burns; the lone, elegantly dressed woman of a 'certain age', impassively observing the world from behind Jackie-O sunglasses; and at her fingertips a glass of Pernod, and a plate of cheese, ham and Cornichons.  And all this from a few crisp, inexpensive cocktail gherkins!    

MOROCCAN LEMON PASTE
Combining salted lemons with a number of spices commonly used in the region’s cuisine, most notably Cumin, our paste creates an exceptionally distinctive taste. For the caterer requiring an authentic, unusual and truly evocative flavour this is an ideal product.

MINI CAPERS AND CAPER BERRIES
Harvested from the arid hills and sierras of southern Spain, our mini capers and caper berries have been one of our more enduringly successful products. Packed in 1/2 Ltr kilner jars, with mineral water and white wine vinegar added, they represent a quality ingredient capable of satisfying the most demanding chef.

CHARMELLA
Based on a Moroccan recipe, this is a chilli sauce which is spicy and fragrant, but not searingly hot a la Harissa. And Charmella’s uses are not limited to dishes of North African origin, it also makes a terrific component in a marinade for fish or poultry. Charmella can be particularly effective when used in canapes.

DRIED WILD MUSHROOMS
An ever popular ingredient available from Centaur Foods in bulk or retail packaging. A ‘Forest Mix’ of four different types of wild mushroom is included in the range, as well as dried Morilles, Ceps and Trompettes de Mort. Also available is Cep powder, a particularly popular ingredient with a number of our food processing clients.

BLANCHED VACUUM PACKED CHESTNUTS
Traditionally associated with winter and Christmas menus, this consistently popular ingredient is increasingly being used year round.
